C. annuum

The largest and most familiar of the chili species: jalapeños, cayennes, poblanos, most ornamentals, and every bell pepper. Annuums are generally the fastest to germinate, the quickest to ripen and the most forgiving of a short northern summer, which makes them the natural place to start.

Heat runs the whole way from none at all to genuinely fierce, so the species tells you very little about the burn — check the heat level on each variety.
