This one has a real history. Lucina Cress, a gardener in Ohio, was given miniature red and yellow bell peppers by an elderly neighbour in the 1980s — and then made the chocolate one herself, saving seed from the smallest fruits of her chocolate bell crop year after year until she had a true miniature. She sent a stuffed-pepper recipe out with her seed orders; in good years her hospital auxiliary canned several hundred jars of them.

The pods are squat three-lobed mini bells of about 5 cm, ripening from green through a run of browns to a deep chocolate that goes almost purple-black when fully ripe. Brown bells read as brown because the green pigment stays put while the red develops underneath — and because they are fully ripe fruit, they are sweeter than any green bell. Thick, crisp, juicy walls and no heat at all.

Short, stocky, upright plants that crop early and heavily — well over twenty fruits apiece. Stuffing is what they were selected for and still what they do best, but they are also excellent pickled, in salads, or eaten whole as a snack.
