Peter Pepper, Yellow

The yellow form of the Peter Pepper — a Southern American heirloom with a shape that has made it famous, and which we will leave you to discover for yourself. Nobody knows where it came from; the pod form appears to be entirely natural, and the variety survived through informal seed-saving networks in East Texas and Louisiana long before anyone catalogued it.
Pods run about 8–10 cm, cylindrical and deeply wrinkled, ripening green to a clear bright yellow. The heat is real — around serrano level, hotter than a jalapeño — but the yellow runs a little mellower than the red, with a clean cayenne-like burn and thin walls that dry quickly.
The plant is squat, densely leafy and very productive. It works as a jalapeño or serrano substitute in salsa and hot sauce, dries well to powder, and its compact frame makes it a fine bonchi plant. Mostly, though, people grow it for the look on visitors’ faces.
