Indian Red

Description

A hot, straight-talking chili of the kind that does the everyday work in Indian and South Asian kitchens — the pod that goes into the tempering oil at the start of a dish and sets the tone for everything after it. Slim and pointed, ripening green to a deep red.

The pungency is sharp and clean, with none of the sweetness or fruit that softens a habanero. That is the point: this is a chili for heat and for the bright, direct chili flavour that curries, dals, pickles and chutneys are built on, fresh or dried.

The plant is moderately compact and unusually obliging in a northern summer, cropping well outdoors even in a cool season, and it comes to maturity quickly — a good choice if your growing window is short.
