The classic chile of Puebla, and one of the most useful peppers you can put in a garden. The pods are large — commonly 10–15 cm long and 5–8 cm wide — heart-shaped, thick-walled, and hollow enough to stuff without a fight. They start a deep purplish green and ripen to a very dark brown, almost black.
Mild, but not heatless: a poblano sits well below a jalapeño, with the occasional pod that surprises you. Picked green the flavour is rich and earthy; left to ripen it turns sweeter and rounder. Dried, it becomes the backbone of Mexican cooking — smoky, raisin-sweet, and indispensable to mole.
This is the pepper for chiles rellenos and for chiles en nogada, Puebla’s own dish; roasted, peeled and sliced into rajas it belongs in almost anything. Sturdy bushy plants of 60–90 cm carry a heavy crop of big pods and finish in around 65–75 days from transplant.
