Description

The Jamaican squash pepper: a broad, flattened mushroom of a pod with a wide flaring calyx, ripening green to a deep red, carried in quantity on a productive plant.

It is constantly mistaken for a Scotch Bonnet, and constantly mislabelled as Capsicum chinense — but this is a C. annuum, and growers who know both can tell them apart by the calyx and the leaf. The flavour gives it away too: fruity and bold with a clear citrus note, and a rounder sweetness than a bonnet has.

The heat is a proper kick without going to bonnet extremes, which is exactly what makes it useful in everyday cooking rather than reserved for sauce day. Thin walls and seeds concentrated at the top make it quick to prepare. Sauces, salsas, jerk marinades, and an excellent powder.
