C. baccatum

The South American ajis — and the species we would keep if we could only keep one. Baccatums are built around flavour: fruity, citrus-bright, often genuinely sweet, with the heat sitting behind the taste rather than in front of it.

The plants grow large and take their time, but they crop enormously and handle a cool summer better than most chilies do. Many also carry the distinctive spotted flower that makes the species easy to recognise.
