Aji Golden

Description

A Peruvian baccatum and a close relative of the Lemon Drop, with slim pendant pods of 6–10 cm that hang in quantity and ripen from a translucent pale green to a rich golden yellow.

The flavour shifts as it ripens, which is worth knowing: picked green it is clean and sharply citrus with a floral, almost perfumed edge; left to gold it turns sweeter and distinctly fruity. The flesh stays crunchy at both stages. The heat is real — this is a medium-hot chili rather than a mild one — but it sits behind the flavour rather than in front of it.

Bushy plants that get big enough to want staking under a full load, and they carry a great many pods: fifty to a hundred in a good season is normal. Excellent in salsas, marinades and fresh salads, and it dries into a golden powder well worth having.
