T-Rex Green

Description

A green mutation of the chocolate T-Rex, and one of the very few superhots that stays green all the way through. Where most peppers use green as a waiting room, this one finishes there: the ripe pods settle into a greenish, mustard-yellow tone rather than turning red or brown, the same trick a handful of other green varieties pull.

The shape is pure T-Rex — heavily wrinkled, twisted, almost accordion-folded — and the heat is at the top end of what a chili does. No T-Rex has ever been through a laboratory, so every figure quoted for the family is a grower’s estimate; nobody who has eaten one disputes where it belongs.

The flavour is bold and earthy, which is what makes it worth using rather than merely surviving: it carries through a sauce or a salsa instead of just burning. Pods can also be picked earlier for a sharper, fresher edge.
