Pink Habanero
C. chinense
A habanero-family chinense with the aroma intact and the burn removed. The pods are elongated rather than lantern-shaped, ripening green through peach to a soft pink-orange, and they are effectively heatless — you can eat one whole and enjoy it.
That is rarer than it sounds. The habanero perfume — floral, tropical, citrus, faintly sweet — normally arrives welded to a hundred thousand Scoville or more, and separating the two gives you something genuinely useful: a pepper you can slice raw into a salad, put on a cheese board, eat as a snack, or use where the fragrance matters and the heat would ruin it. It even works in sweet applications, which is not something you can say about a real habanero.
Compact enough for a pot, heavy-cropping, and easy. Note that the name “pink habanero” is also used elsewhere for a fiercely hot pepper — this is the mild one.
