A chiltepin that ripens the wrong colour, and is all the better for it. Where the wild tepin goes red, this one matures to a deep coffee brown — the same tiny round berries, barely a centimetre across, standing upright in enormous numbers on a compact bush.
The heat is the chiltepin signature: fast, very sharp, and then gone again. Mexican gatherers call it arrebatado, snatched away — it hits hard and clears quickly, so it lifts a dish rather than flattening it. The brown pods carry an earthy note the red ones do not.
Chiltepins are tough, long-lived perennials that grow almost anywhere and will keep going for many years in a pot. That woody frame and those small leaves make it one of the best bonchi subjects there is, and it is an excellent indoor plant. Crush the dried pods into flakes or powder — a little goes a long way.
