Description

Clavo is Spanish for nail, and the pods look the part: angular and hard-edged with odd bulging sides, as though they had been forged rather than grown. They ripen green through orange to red, and they come in quantity — the plant stays compact and covered.

The flavour is what separates it from the rest of the habanero family. The aroma is savoury and faintly tomato-like rather than the usual tropical perfume, and the flesh is sweet and juicy. The heat is a real habanero-family burn, sharp and building rather than arriving all at once, but it stops short of the superhots — which leaves it genuinely usable in everyday cooking instead of reserved for sauce day.

The compact habit and woody frame make it a good subject for bonchi. Fine fresh, excellent in salsas, and it mills into a first-rate powder.
