Trinidad Perfume

Description

Trinidad Perfume is a seasoning chili for anyone who loves the habanero aroma but not the burn. It takes its name from the island of Trinidad, and the name suits it well: the pods carry a full, fruity habanero-type fragrance with a fresh citrus note and a gentle sweetness, while the heat stays very mild.

The pods are small, glossy and lantern-shaped, roughly 2.5–4 cm long, and ripen from pale green to a bright, sunny yellow. Among other low-heat chinense varieties, such as Pink Habanero, it stands out with an aroma and taste of its own.

This is a pepper for the kitchen. Use it fresh in salads, salsas and ceviche, cook it into Caribbean-style rice and stews, or dry it for a fragrant powder. Mixed with a hotter habanero, it lets you set the heat of a sauce exactly where you want it while keeping all the aroma.

Like most of its relatives, Trinidad Perfume enjoys a long, warm season. Sow it early, and in northern conditions grow it in a greenhouse or a good-sized pot in the warmest, brightest spot you have.
