Description

The most famous novelty chili there is, and one whose shape needs no description here. What is worth saying is that nobody bred it that way: the origin is unknown, the form appears to be entirely natural, and other peppers show the same tendency. It survived through informal seed-saving in East Texas and Louisiana long before anyone catalogued it, and reached the trade through H. W. Alfrey of Knoxville, Tennessee — whose strain is still sold under his name.

The pods are cylindrical and deeply wrinkled, around 8–10 cm, ripening green to a glossy red. The heat is not a joke: roughly serrano level, hotter than a jalapeño, with a clean cayenne-like burn and thin walls that dry quickly.

The plant is squat, densely leafy and very productive. It substitutes happily for a serrano in salsa or hot sauce and grinds into a good powder — though most people grow it for the reaction it gets.
