A Capsicum baccatum with a genuine pedigree behind it: developed at PanAmerican Seed out of Professor Jim Nienhuis’s lab at the University of Wisconsin–Madison, and an All-America Selections winner in 2017 — the first early aji to earn one.
Speed is the point of the variety. Most baccatums keep you waiting; this one gives green pods in roughly 50–55 days from transplant and red ones in 70–75, which puts a proper aji within reach of a short northern season. The pods are narrow cones of 8–10 cm, ripening green to red, and both stages are worth picking.
The flavour is citrus first and foremost — bright and refreshing — with sweetness arriving as the pod reddens, and a medium heat that stays out of the way. The walls are thin and crisp rather than fleshy, so the pod snaps when you bite it, and it dries beautifully into flakes or powder.
The plant is large and indeterminate, around 80–90 cm and wider still, so give it a stake or a cage and it will keep going all season.
