Description

A Chilean baccatum, and a big one: the pods run to around 12 cm, tapering evenly to a point, ripening green to a clean red. They slice into neat rings, which is how they are most useful — scattered over a pizza, through a salad, or into anything that wants a bright, even heat.

The heat is squarely medium-hot rather than gentle, and the flavour is the fruity, faintly sweet character the species is grown for. In Chile peppers like this go into the household pastes and sauces — salt, vinegar, garlic, and enough chili to make it worth eating.

The plant is substantial: well over a metre, bushy and spreading, and it wants a large container and real sun to do its best. In return it produces generously right through the season.
