Description

Carolina Reaper, Caramel is the Reaper in warm, earthy tones. Everything that makes the pods recognisable is still there — the wrinkled, blistered skin, the lumpy shoulders and, on most pods, the pointed tail — but instead of fiery red they ripen from green to a soft caramel brown. It is a colour you rarely see on a superhot, and a plant full of ripe pods looks quite unlike any other Reaper in the garden.

Use it in hot sauces, ferments and powders, and use it sparingly: a single pod is enough for a large batch.

The heat is Reaper-class. No laboratory test of the caramel form has been published; for reference, the red Carolina Reaper averages 1,641,183 SHU in lab testing. Handle it with the same care as any Reaper — gloves on when cutting, and start with the smallest amount in cooking.

This line is not fully stabilised. Some plants may differ in pod colour or shape, and the tail can vary from pod to pod. Isolate the plants if you want to save seed. Like all Reapers, it is a late, long-season superhot: sow it early and give it warmth, light and a roomy pot.
