Aji Mojo

Description

A baccatum with long, slender, slightly curved red pods — 10–15 cm and crisp right through — and a flavour built around brightness rather than heat: citrus up front, a tropical fruitiness behind it, and a mild-to-medium warmth that leaves the taste room to work.

In our own growing it has been notably willing in a cool Finnish season, still setting fruit when other baccatums slow down. That reliability, combined with a genuinely good flavour, is what earns it a place.

Best used fresh, where the fruit character is at its strongest — salsas, cold sauces, quick pickles — and it dries into a fine powder if you have a surplus. A steady, heavy cropper.
