Carolina Reaper, White
C. chinense
Carolina Reaper, White is the palest member of the Reaper family, and one of the most striking. The pods carry the full Reaper look — wrinkled, blistered skin and, on most of them, the stinger tail — but instead of red they ripen from green to a pale, creamy yellow-white.
Where they ripen matters. Pods hanging in the shade under the leaves can come out almost pure white, while those in full sun take on more of the cream-yellow. A plant carrying both is a strange and beautiful sight, and if you want the whitest pods, let the foliage cover them.
The pods run around 5–7 cm, and the flavour is fruity. On heat there is no reason to expect anything gentler than the original: no laboratory test of the white form has been published, and the red Carolina Reaper averages 1,641,183 SHU in lab testing. Handle it with the same care — gloves for cutting, and a very small amount in cooking.
Like the other Reaper colour forms, this line is not fully stabilised, so expect the occasional pod that differs in shape or colour, and isolate the plants if you want to save seed. It is a late, long-season superhot: start it early and give it warmth, light and a big pot or a greenhouse bed.
