Jalapeno, Rayados
C. annuum
Jalapeño Rayados takes its name from the Spanish word for striped: as the pods ripen, the skin develops fine corky cracks and stripes. It comes from the Mexican jalapeño tradition, where this type is often smoked into chipotle.
The pods are big and thick-walled, ripening from green to red, and the flavour is the main reason to grow it: very tasty, with a medium heat that is just right for many dishes. Another feature that sets it apart is the plant itself, with hairy stems and foliage, unusual for a jalapeño.
Perfect for stuffing, grilling and roasting, or raw for a fresh, crunchy kick, and a natural choice for smoking. The plant is a prolific producer and easy to grow.
