Description

Jalapeno Mammoth (C. annuum) is the jalapeño taken to its logical extreme. The pods run 12–13 cm long and 4–5 cm across — roughly twice the length of a supermarket jalapeño — and the walls are very thick, which is exactly what the variety was selected for.

That combination makes it the best stuffing jalapeño in the catalogue. A pod this size and this thick-walled holds a filling without collapsing, and poppers made from it are a different proposition to the usual fiddly little ones. The flavour is sweet and fleshy with the familiar jalapeño character, and the heat stays mild at 3,000–5,000 SHU — enough to know you are eating a chili, not enough to stop you eating several.

The pods are picked dark green, which is how the variety is grown and used. The plant is vigorous and heavy-yielding with a continuous set — rather than one concentrated flush it keeps producing over a long window, so you pick from it for weeks. Around 72–77 days from transplant to the first green harvest, and it carries resistance to PVY and TMV.

Stuffing first, then fresh in salsa, grilled whole, or pickled in thick rings.
