Sweet Apple Kambe
C. annuum
A Bulgarian sweet pepper of the kambe class — the local term for these squat, blocky, thick-walled pods with three or four blunt lobes. This one is at the large end: broad, flattened, tomato-shaped fruit with exceptionally thick, crisp flesh, ripening from pale yellow to red, often with a purple flush where strong light hits them.
It is sweet, and properly so — this is the pimiento-style pepper Eastern Europe uses for stuffing, roasting and preserving, not a chili wearing a disguise. There is no meaningful heat, at most a faint warmth in the odd pod.
The plant stays compact and bushy at around 50–80 cm, which is remarkable for the size of fruit it carries. A tip for stuffing: cook the filling first and roast the pod only briefly, or the walls go soft and you lose the crunch that makes it worth growing.
