Description

Madame Jeanette is the signature chili of Suriname, where it goes into almost every part of the local cooking. The pods are irregular, wrinkled and roughly bell-shaped, a little bigger than a Scotch Bonnet, and they ripen from green to a bright yellow, sometimes blushing toward orange.

The heat is in the habanero class, roughly 125,000–325,000 SHU, and it comes with a big, fruity and slightly sweet flavour with tropical notes. That combination is what makes it such a good chili for hot sauces, salsas and marinades.

The plants are highly productive and keep setting pods through the season, so there is plenty for fresh use, sauces and drying.
