Pellegrino

Description

A compact Italian selection built on a Calabrian peperoncino. The plant stays low and bushy at around 40–50 cm and loads itself with slim pods of roughly 3–4 cm that stand upright on the branches — a detail that makes it unusually good-looking for a working kitchen chili. They ripen green to bright red.

The heat is sharp and clean rather than lingering, which is what you want when a dish needs a cut of pungency without sweetness getting in the way. It works fresh, but drying is where it earns its place: the thin-fleshed pods dry fast and mill into a fine, bright powder.

Few varieties reward a small pot this well. A balcony, a windowsill or a tub by the door is enough, and the crop is heavy every single year.
