Description

A Brazilian baccatum named for the state of Minas Gerais, in the southeast of the country. The pods are long and elongated, ripening through a full sequence — light green to yellow to orange to red — so the plant carries several colours at once through the late season.

The texture is what people remember: a clean, smooth crunch, with the berry-like fruitiness typical of the species and a medium pungency that seasons a dish without dominating it. Very good fresh, and it dries into an excellent powder.

This is a tall, vigorous plant rather than a windowsill subject — expect well over a metre in good conditions — and it rewards a big container or a spot in the ground. Light is the whole game with any chili, but especially with a plant this size: the more it gets, the more it sets.
