Aji Chicotillo is a Capsicum baccatum variety known for its large, juicy, thick-walled pods and an outstanding, clean flavor. Fresh, it is prized for its crisp texture. Smoked and dried, it becomes something deeper — bright baccatum fruit wrapped in warm, savory wood smoke.

The pods are prepared by hand and slowly smoked for over 24 hours using traditional Nordic smoking woods. No smoke liquids, sprays, or artificial flavorings are used at any stage — only time, wood, and careful control. After smoking, the chilies are dried using a process refined through decades of experience, locking flavor and smoke into a stable, expressive flake.

The heat sits in the medium range — present, friendly, and never in the way. This is a smoked chili built for flavor first: the fruity baccatum character and the smoke are the main event, with just enough warmth to tie them together.
