Description

Duke Aji was bred at Duke University in the United States. My seeds came to me years ago from a person who took part in breeding it there, and it has been a dependable red aji ever since, with long, slender pods of around 8–12 cm, lightly wrinkled and tapering to a point. They hang among the leaves and ripen from light green through orange to a glossy red, and a plant in full crop usually shows all three colours.

The walls are thin and crisp, and the flavour is a little sweet with a berry-like fruitiness. The heat is a solid medium to hot, a clear step up from a jalapeno. Thin walls make the pods quick to dry, and they grind into an excellent powder. Fresh, they slice into thin rings for pizza, salads and stir-fries, and they freeze well for winter.

The plant grows fast in warm weather yet copes with cool spells, which suits a northern summer, and it gives a reliable crop year after year. Plants reach about 80–120 cm; a 10–15 litre pot is enough, and it also does well indoors in a bright spot.
