Chili Vault: Fish Pepper - 10g Chili Flakes
A living piece of chili history.
Fish Pepper is an heirloom Capsicum annuum with roots in the 19th-century African-American kitchens of the Mid-Atlantic, around Baltimore and Philadelphia. Cooks there used its pale young pods in cream-based fish and shellfish dishes, where the heat disappeared into the sauce without a trace of color — which is how the variety got its name. It nearly vanished in the 20th century and survived thanks to seeds the painter Horace Pippin traded with a beekeeper in the 1940s.
The plant is as distinctive as its story: green-and-white variegated leaves and striped pods that move from cream and green through orange to red, often keeping their stripes to the end. The flavor of the ripe pods is clean and bright, with a light sweetness, and the heat is honest and direct — closer to a cayenne than to a sweet pepper.
This Vault batch is produced in small quantity from Finnish-grown plants. The pods are harvested ripe, halved by hand, and dried with precision to preserve their fresh aroma and red color. No smoke or added processing steps are used — the focus is on clarity and a clean, lively heat.
The resulting flakes are vivid, crisp, and versatile. A historic variety that still earns its place in the kitchen.
Produced in a limited run for the Fatalii Chili Vault. Availability is restricted, and this batch may not return.
