Description

Lay a handful of pods side by side and the name explains itself. Aji Confusion grows ivory pods that twist, fold and split into lobes at the base, so one looks like a little bell, the next like a crumpled crown, and the one after that like nothing in particular. Most are around 4–6 cm long. They ripen from pale green to creamy white, and some pick up a soft peach blush at the very end.

The flavour is fresh and fruity with a light floral side, and the heat sits in the medium range: easy to notice, easy to cook with. The pale colour is useful in the kitchen. The pods make a white or cream sauce that keeps its colour, they ferment well, and fresh slices add heat to a salsa or a salad without turning it red.

The plants grow large and spreading, often well over a metre, and carry a generous crop once they get going. Give them a 15–20 litre pot or a bed, a stake, and an early start, as the pods take their time to ripen. Like most ajis it handles a cool summer without fuss.
