Description

The name links this aji to the chicotillos of Chuquisaca in southern Bolivia: chicotillo means a little whip, and grueso means thick. Chicotillo Grueso Orange lives up to the second word. Its pods are stocky rather than whip-like, around 8–10 cm long and broad at the shoulder, with wrinkled, slightly blistered skin and a blunt, rounded tip. They ripen from green to a warm golden orange.

Expect the familiar aji character: a fruity, fresh flavour and a medium heat that is there to notice without getting in the way. The orange pods are good chopped fresh into salsas, sliced into salads, or cooked down into a bright orange sauce, and they keep their colour well in a jar of pickles.

Plan for a substantial plant, as with the other chicotillos. A 15–20 litre pot or a greenhouse bed and a stake will carry the crop, and like other ajis it copes well with a cooler summer.
