Fushimi
C. annuum
A Kyoto heirloom, and a designated traditional Kyoto vegetable — a kyo-yasai. The full name, Fushimi amanaga, means “sweet long”, and it describes the pepper exactly: slender pods of around 15 cm and barely a centimetre or two across, tapering to a point, picked bright green.
Peppers reached Japan with Portuguese traders in the sixteenth century, and around the Fushimi district of Kyoto growers selected them for sweetness rather than heat to suit the local cooking. Records were already calling Fushimi peppers famous by 1684. The result is essentially heatless — sweet, faintly fruity, and above all crisp.
Those very thin walls are the whole point: they blister and char in seconds in a hot pan, and the pod keeps its snap instead of collapsing. Pan-fry with salt, batter for tempura, grill, simmer with dashi, or pickle. Left on the plant the pods ripen red and sweeter still.
Upright plants of about 60 cm that crop heavily and early — first green pods in around 65 days. Open pollinated.
