Ancho is the dried form of Poblano, known for its broad, heart-shaped pods and naturally gentle character. In this Vault batch, the chili’s signature dark sweetness comes forward immediately, with notes reminiscent of dried fruit, cocoa, and soft plum. Heat stays deliberately low, allowing aroma and structure to lead.

To build depth without overpowering the chili itself, the pods are halved by hand and slowly smoked for over 24 hours using real wood. This long, controlled smoking integrates the smoke into the chili’s flesh rather than coating the surface, resulting in a smooth, layered smokiness that supports the Ancho’s natural sweetness instead of masking it.

After smoking, the chilies are dried using a carefully adjusted process refined over decades of experience. Most seeds are removed before drying to ensure clean flavor, consistency, and balance. No smoke liquids, sprays, or shortcuts are used at any stage — the final character comes solely from time, wood, and careful control.

The result is a mild but highly expressive chili flake, designed for kitchens where aroma matters more than intensity. This Ancho brings warmth, depth, and a quietly smoky backbone to dishes without dominating them.
