This Vault selection highlights one of the most expressive and distinctive Capsicum baccatum varieties we have worked with. Peppapeach Stripey is known for its beautiful striped pods and its unusually refined aroma, where gentle sweetness meets a soft, peach-like fruitiness that is unmistakable but never overpowering.

Unlike many chilies that announce themselves through heat alone, Peppapeach Stripey is about balance. The heat sits in the mild-to-medium range, allowing the variety’s natural character to remain in focus. When dried carefully, its aroma becomes even more defined — clean, bright, and layered — making it an exceptional chili for cooks who value nuance over force.

As with all Vault items, the chilies are grown and processed in Finland in very small batches. Pods are harvested selectively, prepared by hand, and dried with precise control to preserve volatile aromatic compounds that are often lost in faster, industrial processing. The result is a chili flake that behaves predictably in the kitchen while still offering a clear sense of variety and origin.

Peppapeach Stripey works especially well in dishes where chili is meant to support rather than dominate. It shines in light sauces, vegetable dishes, seafood, poultry, and creative applications where aroma matters as much as heat.
